Minute Ready to Serve Rice (food review)

Lately, I have been really hungry. Not normal hungry but eat-everything-in-sight hungry. Perhaps it has to do with my really long runs (17 miles yesterday!) in preparation for my marathon. Either way, I'm usually hungry about the time that school ends at 3, same as my kids. And I don't want crackers (well, I do but I know I should have something more substantial) and I don't want cold fruit - I want something warm. It's winter still and my stomach craves what every Kansas craves around this time of the year - heat. 

Today I was in luck! My friend picked up my Minute® Ready to Serve Rice bowls this past week so I could try them out. She got me the brown rice version because (to quote her), I like to "eat healthy." Which is totally true - I'd rather serve brown rice over white any day. The problem is, I don't like plain rice much. I like to put stuff in it (butter) and that makes it generally unhealthy.


However, Minute® Ready to Serve Rice came to the rescue again! When you open the package, they have ideas for recipes. I really liked the sound of "mock apple pie" (who wouldn't?) so I got out my ingredients. I even skipped the sauteing apple part by using pre-canned apples from Big A's grandparents. 


This Minute® Ready to Serve Rice snack was just what I was looking for! 260 calories (3 T cooked apples, 1/4 tsp. cinnamon, 1 T brown sugar, along with 230 calories in a rice bowl), warm, quick (under 3 minutes, no kidding), and (most importantly) delicious! I could even push supper back a little tonight with as filling as this brown rice is (my favorite part about rice). 


Tonight we had hot dogs - not the most delicious meal but the kids asked for it (and normally have no opinion on it), so we used the other bowl to make a little casserole for the kids. I figure if not every part of their meal is healthy, I can at least make sure the grain and vegetable get in their tummies. I used some low-calories seasoning to spice it up and the kids really liked it (we don't have picky eaters, thankfully). 

Just like at snack time, this meal was terrific. Very quick - under 5 minutes with both hot dogs AND rice AND vegetable. Any mom - working inside or outside of the home - has time for that! So convenient - pop it in the microwave, toss it in a bowl, add a few ingredients - done. This may be the quickest meal time saver since the crock pot!

I don't know if I'll buy Minute® Ready to Serve Rice a lot - I had to have someone pick it up for me because it's not found in our town grocery store - but it's a really great option to keep on hand for a small snack or meal idea. I also think these would be useful on a trip (as long as you have a microwave, of course). I'm very thankful for the opportunity to try it out.
