Oreo & Fudge Ice Cream Cake
Last year our friend made this for Big A's birthday; this year he requested it.
Prep: 10 minutes (you can do this with a one-year-old tugging at your shorts)
Total Time: 4 hours 10 minutes
Calories: 340
Serves: 12 (could be less or more depending on how you cut the cake)
1/2 c. hot fudge ice cream topping - warmed
1 (8 oz) tub cool whip - thawed
1 (4 serving size) pkg. chocolate pudding
8 chocolate sandwich cookies (Oreos) - chopped or crushed (approx. 1 c.)
12 vanilla ice cream sandwiches - unwrapped
1. Pour fudge topping into medium bowl. Add 1 cup cool whip; stir with wire whisk until well blended. Add dry pudding mix; stir until well blended. Gently stir in Oreos; lick whisk & set aside.
2. Arrange 4 sandwiches on a 24" long piece of foil; top with 1/2 cool whip mix. Repeat once. Top with 4 sandwiches. Frost top & sides with remaining cool whip. Use 4-5 more Oreos & crush them; sprinkle over sides & top to decorate. Bring up foil sides. Double foil top & ends to loosely seal packet. Be sure to lick out the cool whip container & other utensils used in this process.
3. Freeze at least 4 hours. Serve & enjoy. Store leftovers in freezer (although I doubt you'll have any).
Tips:
-If fudge topping is too thick to spread easily, stir in 1/4 c. milk
-Substitute neopolitan or chocolate chip sandwiches
-I thought about using caramel instead of hot fudge topping; don't know if it would work but it sounds good.
